Analisis Kapasitas Petani Kopi Gayo Dalam Praktik Pasca Panen Kopi

Penelitian ini menganalisis kapasitas petani kopi Gayo dalam penerapan Good Handling Practices (GHP) pada praktik pascapanen dengan menyoroti pengaruh relasi sosial-ekonomi antara petani dan tauke sebagai faktor penentu dalam sistem produksi kopi di Aceh Tengah. Menggunakan kerangka capacity development (UNDP) dan konsep ekonomi moral petani (Scott), penelitian ini dilakukan secara kualitatif melalui observasi partisipatif, wawancara mendalam, serta studi dokumentasi di tiga desa, Bintang Kekelip, Blang Gele, dan Linung Bulen I, Kab. Aceh Tengah. Hasil penelitian menunjukkan bahwa kapasitas petani bervariasi pada tiga tingkatan yaitu rendah, menengah, dan tinggi, di mana sebagian besar petani memahami GHP secara normatif namun terkendala oleh keterbatasan teknis, sarana pengolahan, dan tekanan ekonomi. Relasi antara petani dan tauke memperkuat ketergantungan struktural yang mendominasi harga, modal, dan akses pasar, sekaligus membatasi inovasi pascapanen. Meskipun demikian, ada petani yang menunjukkan potensi adaptif melalui eksperimen pengolahan dan pembelajaran mandiri. Temuan ini menegaskan bahwa peningkatan mutu dan kapasitas petani kopi Gayo tidak hanya menuntut intervensi teknis, tetapi juga penguatan kelembagaan lokal, pendampingan berkelanjutan, dan transformasi relasi tauke–petani menuju kemitraan yang lebih adil dan partisipatif.
