PENGENTASAN STUNTING MELALUI PENDEKATAN INOVASI KULINER LOKAL CITA RASA GLOBAL DI KECAMATAN TERANGUN KABUPATEN GAYO LUES

Aceh termasuk dalam provinsi dengan prevalensi stunting terbanak kelima di tingkat nasional tahun 2022 yaitu 31,2%. Prevalensi stunting di Kabupaten Gayo Lues sebanyak 34,6%. Upaya yang dapat dilakukan yaitu melibatkan stakeholder dan masyarakat dalam edukasi gizi. Kegiatan pengabdian bertujuan untuk memberdayakan ibu balita di Kecamatan Terangun Kabupaten Gayo Lues dalam mengolah inovasi kuliner lokal cita rasa global. Peserta kegiatan adalah ibu balita stunting dan non stunting berjumlah 350 orang dari 7 desa terpilih diantaranya Desa Padang, Gewat, Soyo, Terangun, Blangkuncir, Garut dan Berhut. Metode pelaksanaan kegiatan antara lain peninjauan data jumlah balita stunting terkini serta melakukan audiensi dengan stakeholder untuk permohonan izin pelaksanaan kegiatan sosialisasi inovasi kuliner lokal cita rasa global yaitu Sushi gutel, Bolu jeruk keprok, Sosis ikan gegaring daun kelor dan Gelato alpukat karamel. Kegiatan inti berupa demonstrasi awal bersama pakar gizi untuk menyesuaikan komposisi menu makanan dengan AKG harian balita. Selanjutnya pendampingan pada peserta kegiatan yang berlangsung sebanyak 6 kali, serta pemberian olahan inovasi oleh mahasiswa pendamping pada balita sebanyak 2 kali pemberian (pagi jam 10.00 wib dan sore jam 16.30 wib). Kegiatan akhir yaitu demonstrasi ulang olahan inovasi oleh peserta. Hasil kegiatan menunjukkan respon positif dari stakeholder dan peserta karena memberikan informasi dan keterampilan dalam mengolah makanan tambahan berbasis pangan lokal. Diharapkan para stakeholder dapat mengobservasi dan melanjutkan inovasi olahan ini untuk dikembangkan dalam menu posyandu di setiap desa.


Abstract

Aceh is included in the province with the fifth highest prevalence of stunted at the national level in 2022 is 31.2%. The prevalence of stunted in Gayo Lues Regency is 34.6%. Efforts that can be made include involving stakeholders and community in nutrition education. This service activity aims to empower mothers of toddlers in Terangun District, Gayo Lues Regency in preparing local culinary innovations with global taste. The participants involved were mothers of stunted and non-stunted toddlers is 350 people from seven selected villages including Padang, Gewat, Soyo, Terangun, Blangkuncir, Garut and Berhut. Methods for carrying out activities include reviewing the latest data on the number of stunted toddlers and holding hearings with stakeholders to request permission to carry out activities to socialize local culinary innovations with global taste is Gutel sushi, Jeruk keprok cake, Moringa leaf gegaring fish sausage and Caramel avocado gelato. The core activity is an initial demonstration with a nutrition expert to adjust the composition of the food menu. Followed by mentoring for participants which took place six times, as well as providing the intervention to toddlers in each two times given (morning at 10.00 WIB and afternoon at 16.30 WIB). The final activity is a repeat demonstration of the innovation process by the participants. The results of the activity showed a positive response from stakeholders and participants because gain information and skills in processing additional food. It is hoped that stakeholders can observe and continue this food innovation to be developed in the posyandu menu in each village.
